Perfect for a summer salad accompanied by South American style dishes.
- 1 ripe mango
- 1 Avocado
- 8-10 tomatoes
- Flat leaf parsley
- Olive oil
- Freshly ground black pepper
- Pinch sea salt
Instructions:1) Peel the mango and cut into small crescents. Halve and de-stone the avocado and cut into easy-to-eat slices or crescents.
2) Cut cherry tomatoes in half and add to the mango and avocado.
3) For the dressing, juice the lime and add olive oil to taste. Add freshly ground black pepper and a pinch of sea salt. Whisk together.
4) Sprinkle herbs over the salad and pour on the dressing.
