Creme Brûlée for Two
Warm the heart of a loved one with a caramelised, vanilla-rich creme brûlée served in a heart shaped ramekin. Makes enough for 2 ramekins (one heart serves two people).
Ingredients:- 4 egg yolks
- 30g caster sugar
- 1 vanilla pod
- 600ml single cream
- 60g Demerara sugar
Instructions:1) In a large bowl beat the egg yolks with the caster sugar.
2) Slice the vanilla pod down the middle and scrape out the seeds. Place the cream in a saucepan and add the seeds to it. Heat the cream to just under boiling point then pour over the egg yolk mixture, stirring all the time.
3) Carefully divide the mix between 2 Le Creuset heart ramekins. Set in a roasting tin and add water until halfway up the sides of the ramekins.
4) Preheat the oven to 160 degrees/gas mark 3 and bake for about 25 minutes or until just set.
5) When cool sprinkle the sugar evenly over the top, melt under a very hot grill or with a cooks blowtorch until the sugar melts and caramelises. Chill for two hours before serving.
