There’s a wealth of cookery books and TV shows encouraging us to experiment with so many cuisines from around the world, and it’s great to have a go - but many of us don’t always have the right tools for the job sitting in our kitchen cupboards. With that in mind, we’ve put a lot of thought into creating quality speciality pieces to help you prepare a variety of dishes.

This poacher is perfect for subtly flavoured fish such as halibut or tilapia, and makes an impressive dish for a dinner party.
A kitchen essential for oriental cooking is the 32"wok featuring a non-stick Teflon-coated base. Made from aluminium encased in stainless steel, heat is evenly distributed in the pan and the shape is designed so that the oil constant ly collects in the small bottom, causing it to get very hot. This means that food can be stir fried using very little oil, as the ingredients are pushed through and recoated constantly through the cooking process, allowing vegetables to retain many nutrients and remain crisper and more colourful than with normal frying.
Woks can be used for a number of other cooking methods including steaming, stewing, deep frying and braising. This model features a lid and short handles so that it can fit in most ovens.
Paella is fun to cook and bursting with delicious ingredients, but it can be a challenge to get the texture and consistency just right. Investing in a paella pan can make all the difference. A useful specialist item for the home cook is a bain marie - a cooking implement with a layer of water for gentle and gradual heating to a fixed temperature, ideal for melting chocolate, making sauces or custard. Take advantage of seasonal fruits and berries by making sweet and sticky jams, preserves, marmalade or chutney in the generously-sized John Lewis maslin pan which is oven safe up to to 375°C. No home should be without the John Lewis pasta pot with its internal strainer to make cooking pasta or potatoes so much simpler. Use it without the strainer as a stockpot.

None of these products come cheap, but stainless steel cookware can last a lifetime if it’s cared for properly. The majority of our speciality cookware is dishwasher safe, although the best method of cleaning your cookware after everyday use is hand washing with hot, soapy water and thoroughly drying with a cloth before storage. If you’re going to use the dishwasher, be sure to remove cookware immediately after the wash cycle and hand dry to avoid spotting.
Stainless steel cookware may also develop sedimentation (limescale) stains, usually seen as a chalky, white residue. A safe way to clean this is by soaking the item in a solution of equal parts of vinegar and water, or filling it with the solution, bringing to the boil and allowing to cool, before washing in hot, soapy water and drying. Keep a bottle of Bar Keeper’s Friend handy (822 13031 £2, available in our shops) - this general purpose stain remover will whisk away stains and leave your cookware looking shiny and new.
