What sorts of things are important when choosing a Digital SLR Camera?

But what about number of Megapixels? Do more pixels mean better quality?

Not necessarily. You have to take into account the size of the sensor, the bigger the sensor the bigger each individual pixel is and therefore they have a better ability to absorb light, meaning better image quality.
