A fruity recipe for a vibrant strawberry and lime summer cocktail or refreshing ice lollies. You can replace the gin with more water for an alcohol-free version

Strawberry and lime cooler recipe


Makes 2 cocktails or 6x 95ml lollies
Prepare 10 minutes, plus overnight freezing for the lollies

You need:

200g strawberries, plus 3-4 extra to garnish

90ml elderflower cordial

Juice of 1 lime

60ml gin (optional - use equivalent amount of water)

1 tbsp shredded mint leaves

How to:

1 Hull the strawberries using an OXO Good Grips Strawberry Huller. Slice 4 and set aside, and place the rest (halve any large ones) in a high-speed blender or smoothie maker with the other ingredients plus 300ml cold water. Whizz until smooth.

2 To make ice lollies, divide the sliced strawberries between the 6 moulds of a Zoku Classic Pop Mould, then pour over the mixture. Freeze for at least 6-8 hours, ideally overnight.

3 To make frozen cocktails, add a handful of ice cubes to the blender and whizz again, then pour mixture into chilled glasses, garnish with the strawberry slices and serve immediately.
