Waitrose & Partners No.1 Christmas Pudding, 400g

The Waitrose & Partners No.1 Christmas pudding is made with plump vine fruit, pecan nuts and a generous splash of fine Champagne Cognac and matured for a year to develop a rich rounded flavour.

The 400g size serves four. For best results, microwave or steam for one hour. Place in a steamer over boiling water or alternatively, use a large saucepan with a trivet or an upturned heat-resistant saucer. Place the basin on the trivet/saucer inside in the saucepan and add boiling water to come halfway up the basin. Steam/simmer with the saucepan lid on. Top up with boiling water as necessary. Do not allow to boil dry. Do not reheat once cooled.

How to flame a Christmas pudding
Edgar is a fan of flambéeing. For some festive flair, serve your guests a flambéed pudding.
Step 1: Warm 100 ml of your chosen spirit (brandy, rum, whisky or vodka) in a small saucepan but make sure you don’t allow it to boil.
Step 2: Pour it over the pudding, keeping it at arm’s length, then quickly and safely ignite.
