It’s named after the popular sport played in the gastronomically renowned Basque region of Spain. Nodules on the underside of the lid are shaped like chistera rackets and during cooking, they collect moisture that drips back evenly into the food. Providing optimum moisture retention, this pan is ideal for creating delicious stews and other slow-cooked wonders.

Chistera lid design
The pan’s chistera design collects condensation and evenly distributes it over the cooking food. This produces even, continuous humidification of food with the resulting condensed water produced during cooking. Connoisseurs of Staub products will already be aware of this moisture system from the flat lids of its cocotte casseroles. Thanks to the chistera drop structure, food is kept moist with the domed lid of this multifunction roaster.
Even heat distribution
Cast iron is a carbon-rich iron alloy and so is exceptional at retaining heat, diffusing it slowly and distributing it evenly. Once cast iron is hot, you can turn the heat down to a minimum for gentle simmering and to reduce energy consumption. Cast iron also retains cold: refrigerate before serving and your cast iron product will remain cool at the table.
This pan is ideal for the searing and slow cooking of meat, fish or vegetables. Achieve juicy and tender cooking results thanks to the lid’s special drip structure. The matt black inner enamelling is ideal for crisp searing and is especially durable. Hob, induction and oven suitable
It can be used on all types of hobs, including induction, and is heat-resistant in the oven and grill up to 250°C. Not suitable for the microwave or dishwasher.
