This versatile cook's knife has a blade made of high-performing, high carbon German stainless steel for long-lasting, superior sharpness, enhanced by the optimal 26-degree sharpening angle. The blade hardness is graded HRC 56, for regular use in the kitchen and it's easy to keep sharp.
