There's nothing quite like a Mousse au Chocolat, and Hotel Chocolat serve a stunning Mousse Collection in their London and Leeds restaurants. This recipe is their tribute, so you can enjoy this classic dessert without even having to leave the house.
A favourite of milk and dark chocolate lovers alike, Hotel Chocolat use 50% milk chocolate in their Mousse au Chocolat Selector to capture all of the deep, nuanced notes of dark chocolate, while tempering those decadent tastes with the sweetness of milk.
The mousse au chocolat might contain only a few ingredients, but it is notoriously tricky to perfect. The bubbles form within a chocolate mousse from the whipping of egg whites, which trap air bubbles within them. However, this is easier said than done: under-whisk, and you won’t create enough air bubbles, over-whisk, and you risk whipping out all of those bubbles which have already formed.
Hotel Chocolat wanted to capture the light and airy texture of a chocolate mousse by creating an incredibly smooth filling which balances cocoa and cream beautifully. For an extra layer of decadence, they’ve encased their mousse in thick milk chocolate, and rolled it in a dusting of cocoa powder for a final hit of cocoa flavour.
If you’re a dessert enthusiast, our Mousse au Chocolat Selector is the perfect treat.
Hotel Chocolat was founded in 2004 to make luxury chocolate with three guiding principles – authenticity, originality and ethics. These remain central to the brand’s success today, and with its Rabot Estate cacao farm and locations across the UK and internationally, Hotel Chocolat connects the world of cacao agriculture with the decadence of top-quality chocolate.
